Leftovers???!!!


Homemade Chicken Noodle Broth

So i know leftovers might not seem like the most exciting thing on earth to talk about on a blog but i feel that many people are missing a great oportunity to turn leftovers in to something special. For example in the uk alot of us will have a roast dinner on a Sunday and come monday we have say Half a chicken carcass leftover and no idea on what to do with it!

First off this is the perfect opportunity to make a great meal, all the love and attention you put into your lets say Chicken for this example on the Sunday doesnt need to go to waste. There is so much you can do. I would always advise to buy the best standard you can afford wether that be Organic or Free range, now seen has you have invested in a quality bird you should try to get the most out of it.

Taking Stock.... making stock, so simple and with a little time and effort you can make your own stock from scratch and has so many health benefits and tastes great heres just a few things you may not know about homemade stock :-

* It is packed with minerals which include calcium to magnesium, sulphur to silicon and even glucosamine and its natural food and easily digested.

* It is packed with gelatin, if made properly and simmered long enough. Gelatin supports skin and hair health, digestion, cellulite, tightens loose skin and is awesome for joint pain and inflammation.

* It optimises digestion a Broth can help cure colds and nothing goes to waste!!!

Now you Have 2 things you can make a meal from or even multiple meals.

One of my favourites is to prepare some noodles, at the same time bring some of the stock you have prepared to the boil, add your flavour profiles for example fresh chillies, sliced ginger, spring onions, fish sauce a little soy, taste and adgust to your tastes maybe some lime juice, now add some vegetables i personally like baby corn, mange tout and some pak choi. Add some of your leftover chicken meat and let simmer for a few minutes, taste again adjust seasoning if needed and serve with some coriander leaves to garnish ;) mmmmmmm
