Low Carb - Prawn, Coconut & Lime Curry with Cauliflower rice


Ingredients

½ tsp of extra virgin coconut oil

2 medium onions (246grams)

2 garlic cloves (6 grams)

225g frozen jumbo frozen prawns

2 tbsps of hot curry powder (mild if you dont like spicy food)

2 chillis (8g)

400ml can of organic full fat coconut milk

3 limes

400 grams of cauliflower

Method:-

Add oil to a deep pan and place on a medium heat, meanwhile slice onions and crush garlic adding both to the pan and sweating down for 3 minutes untill soft.

Next finely slice chillis and add to the pan followed by 2 tbsps of curry powder, stir until all onions are covered.

Add prawns to the pan and heat through for 2 minutes making sure they are covered with the curry powder, as they start to turn pink add your coconut milk and season with lots of black pepper.

Now whilst your prawns are finishing cooking, throw you cauliflower into a food processor or blender and blitz untill it resembles a rice like texture, now place in either a steamer for 5 minutes or a microwave proof bowl and place in a microwave on high for 3 minutes.

Next roll your limes across a work surface placing a lot of weight through your palms to help extract all they're juice, then squeeze all the juice from the limes to the coconut and prawn mixture and combine.

Finally serve with your caulifower rice and enjoy ;)
