low carb - spicy turkey courgetti with carrots and red pepper


Ingredients

1 tsp extra virgin coconut oil

1 small onion (108grams)

3 cloves of garlic (10 grams)

4% fat turkey thigh mince (400 grams)

3 tsps somked paprika (10 grams)

4 chillis (8 grams) i used green finger chillis

1 large red pepper (180 grams)

2 medium organic carrots (165 grams)

1 medium courgette

black pepper

Heat oil in a large frying pan on a medium heat add chopped onions and crushed garlic cloves and sweat down for 3 minutes.

add minced turkey to the pan and cook through for 3 minutes

and season with black pepper and add paprika and chillis

then add chopped peppers and sweat for a further 3 minutes

add chopped tomatoes and mix through then using a speed peeler (or if you have one a spiralizer) cut long thin slices of carrot and courgette and add to the pan.

Heat through for a further 3 minutes mixing all ingredients well and then serve
