Ingredients:-
180 grams unsweetened organic desicated Coconut
75 grams extra virgin coconut oil
1 teaspoon (5grams) Vanilla Bean Paste
4 tablespoons (60 grams) good quality pure maple syrup
75 grams good quality 85% dark chocolate
Recipe Makes 21 chocolate covered coconut balls

Add the desicated coconut in a food processor until the coconut starts to look like flour.
Add the maple syrup, coconut oil, and vanilla to the processor and pulse untill it starts to form a thick paste.
Now using your hands, roll the paste into around 21 small balls. Then place the coconut balls in the refrigerator on a baking tray lined with baking parchment/grease proof paper for about 30 minutes to an hour allowing them to firm up.
Melt the chocolate in the microwave or over bain marie until smooth and spreadable.
Using two forks, roll each coconut ball in the chocolate until completely covered. Scoop the ball out with the fork and let the extra chocolate drip off the fork. Gently place the balls back onto your baking tray lined with baking parchment and chill until the chocolate has hardened. Store in the refrigerator.
