Prawn & Chorizo Courgetti or Pasta (low carb or not, dependant on your current goals)


So as you can see this recipe is great for those either on a low carb diet or not, this recipe serves 2

Nutritional info for courgetti per serving:-

Calories 311, 32g Protein, 15g Carb, 11g Fat. or with Pasta :-

Calories 577, Protein 35g, Carb 71g, Fat 12g.

Ingredients:-

Frozen prawns 225g

Chorizo 56g

Chopped toamtoes 400g

Garlic 10g

red chillis 20g

1 unwaxed lemon

Courgette 600g or wholewheat organic pasta 100g

Method

(If using courgetti either spiralize the 600g or use a speed peeler to create tagliatelle style courgette or If cooking pasta bring a pan of water to the boil and season with salt and pepper)

Chop chorizo and add to a deep pan over a medium heat (no oil needed), let the fat from the chorizo stared to render then add crushed garlic and chopped chilli to the pan and let soften.

(if using pasta now add to your boiling water)

next add chopped tomatoes to the pan followe by lemon zest, juice form half the lemon, prawns and ground black pepper.

heat through prawns untill pink and add either your cooked pasta or raw courgetti, combine and serve .

both taste incredible and so simple ;)
